Lamb Biryani

Instant Pot Lamb Biryani – This is a firm favourite!

Ingredients
1 table spoon oil
5 gloves crushed/chopped garlic
1 inch grated ginger
1 chilli (add to taste, really, 1 is enough for me)
1 tea spoon turmeric
1 tea spoon ground cinnamon
1 tea spoon ground coriander
1/2 tea spoon ground cumin
1 table spoon lemon juice
600grams diced lamb
(Combine all of the above in a bowl and allow to marinate for at least 30 minutes)

1 chopped onion
1 chopped red pepper
fresh chopped coriander
2 cups of rice
2 cups of hot water (same amount of water as rice, basically)
1 or 2 cinnamon sticks

Preparation:
Saute onion in oil until soft.
Add the marinated lamb and fry for 2-3 minutes.
Add water (must be same amount as rice that will be added *later* on)

Cook on 10 mins High Pressure then leave on 5 minutes Keep Warm, release the pressure and open lid.
Add rice, coriander, red pepper, cinnamon stick, salt and stir well.
Cook on ‘rice mode’ (12 minutes, low pressure)
