Instant Pot Lentil Chilli
This was my very fist attempt at using the IP, this recipe came with the Instant Pot book of recipes. I’m using half the quantities in the recipe here as I ended up with too much. The quantities below will serve 4 people easily.
TIP: Use hot water, otherwise it takes a long time to build up pressure.
Ingredients:
225gms red lentils
400ml of boiled, hot water
1 400g can of tomatoes
2 chopped garlic gloves
1 chopped onion
1 red pepper
3 dates
2 table spoons of apple cider vinegar
1 table spoon of dried parsley
1 table spoon of dried oregano
1/2 tea spoon of chilli powder
1 teaspoons paprika (preferably smoked)
1/4 teaspoon of chipotle powder
Preparation:
Blend dates, garlic, red pepper and tomatoes until smooth.
Place ingredients in IP – cook on 10 mins High Pressure. Either NPR or QR will do!
